Help! My Sandwich is Drowning – Tortas Ahogadas in Jalisco

While a bit morbid-looking, the sign wishes to convey the juiciness of a torta ahogada, a dish made famous in Jalisco, Mexico. The sandwich is made on a bolillo, a type of roll, which has a delicious, crisp outside and softer interior. The hardy bread allows the sandwich to endure the spicy sauce it will later be doused with. This dish is definitely a messy meal for those who can withstand some heat from very hot chilies.

The sandwich is cut open and fried pork, chicken and even beans and cheese are added. The whole sandwich then has spoonfuls of a very spicy broth poured over it again and again. The sauce is made from hot dried chili peppers, but a more tame version from tomatoes is usually available for the kids or weaker palates. This version certainly is not lacking in character though, rich in garlic, vinegar and oregano, this sauce has a sweeter quality that is absolutely delicious as well.

The dish is usually served with a side of fried onion rings, salsa, radishes or guacamole. Although this glorious creation is dripping with sauce, it is often the food of choice at soccer games at Estadio Jalisco, the soccer stadium in Guadalajara. It is also quite popular on the street with vendors selling the sandwich on corners throughout the city. Napkins are a must though.
