Tamales begin with a dough called “masa” made of nixtamalized corn. There are also masa mix called Maseca sold so you can decide which would be easier to make. They are then wrapped in corn husks or plantain leaves before cooking. They have a sweet or savory filling, then steamed until firm.
Some countries have made their own version of the tamale. But in
mexico, you often see these in the streets, served by street vendors carrying large steaming pots called tamaleras.
There are about 5000 versions of the tamale sold in Mexico.

In Mexico City, the tamal is often placed inside a wheat bread roll to form a torta de tamal, substantial enough to keep the breakfaster going until Mexico’s traditionally late lunch hour.

If you happen to be anywhere in mexico during the Christmas season, whether you are a heavy drinker or just a social drinker, it is highly recommended that you try out this brew. Nochebuena beer is only available in the Christmas season. The term Noche Buena is also what they call their tradition of having a family dinner during the Christmas eve.
Noche Buena beer is produced by Monterrey brewery, who initially came up with the brew for employees and special friends of the brewery. Apparently, the full bodied, intensely malty brew with perhaps soft touches of sherry became a hit that people who tasted the brew strongly suggested that the brew be offered on stores. Thus, the Nochebuena was offered to the public.
